Healing Turmeric-Ginger Broth


Learn how to make the most delicious, anti-inflammatory turmeric-ginger broth! I love adding chopped fresh turmeric to chicken soup, but this recipe takes the turmeric content and bioavailability to a whole new level. I've created a broth that uses both fresh turmeric and dried, powdered turmeric in combination with other ingredients to get the maximum amount of nutrients into the broth.

Curcuminoids are beneficial polyphenol chemicals found in turmeric. They shut down, or dampen, the primary inflammatory switch in the body, which is a very important step in healing many health issues including inflammatory bowel disease, osteoporosis, type 2 diabetes, Alzheimer's disease, autoimmune diseases such as rheumatoid arthritis, and heart disease. They also help in reducing inflammation from food allergies & sensitivities as well.

Disease is caused by getting too many things that you don't need (inflammation, stress, toxins, infections, food hypersensitivities, allergens), and too little of the things that you do need (antioxidants, relaxation, exercise, healthy foods, proper nutrients).

The magic of curcumin is that it is a master-balancer (an adaptogen). Cancer research has shown that curcumin can shut off the master switch of inflammation called nuclear factor kappa beta (NFκB) better than almost anything else, making it one of the most potent natural anti-inflammatory substances. At the same time, research has also demonstrated that curcumin can help to combat various infections (yeast, bacterial, and viral) that can lead to the inflammation in the first place. Curcumin also activates our genes (via a gene transcription factor call Nrf2) to signal our cells to make more antioxidants, which lowers inflammatory damage. But there is more! When this Nrf2 is activated, we also start to make hundreds of beneficial detoxification proteins to remove harmful toxins from our cells.

The polyphenols (which include the curcuminoids) in turmeric are lipophilic, which means turmeric is best mixed or cooked with fat so you can get the full benefit of this food! This is one of the ways turmeric has been traditionally used in India. Spices are always sautéed first in fat (often ghee) before being used in recipes. This not only allows for the absorption of the beneficial polyphenols, but it also brings out the flavors in the spices.

Green Kale Detox Soup


This flavorful green soup uses simple ingredients to create a nourishing meal that can help support natural detoxification. It is designed for Phase 1 of our Elimination Diet, but of course is a wonderful addition to your weekly meal planning even if you are not on the elimination diet! I chose ingredients for this recipe that are easy to digest and are naturally anti-inflammatory. Perfect if you feel that your body needs a break from some of the heavier foods of winter.

As we turn the corner into a new year, new resolutions, new diets, and new commitments to health inevitably echo around the blogosphere. While I believe it is a wonderful thing to try something new, I think it is only helpful if you enter into your diet or exercise regimen with the goal of learning more about yourself. This is because nobody is more of a guru on your own health than you! I know this might sound hypocritical in a blog post about a Green Kale Detox Soup recipe for the Elimination Diet so let me explain.

The Elimination Diet is not a diet that tells you what is good for you and what is not. It is a process that helps you discover what foods work best for you. We are all unique. There is no one way of eating or one perfect diet that is right for everyone. Even Hippocrates noticed this well over 2000 years ago.

He said: “For cheese does not prove equally injurious to all men, for there are some who can take it to satiety, without being hurt by it in the least, but, on the contrary, it is wonderful what strength it imparts to those it agrees with; but there are some who do not bear it well, their constitutions are different, they differ in this respect, that what in their body is incompatible with cheese, is roused and put in commotion by such a thing; and those in whose bodies such a humor happens to prevail in greater quantity and intensity, are likely to suffer the more from it. But if the thing had been pernicious to the whole nature of man, it would have hurt all.” 

What he meant by this is that some foods can make people strong and healthy while the same foods could make others weak and sick. This is as true today as it was then.

There really are no bad foods. Only foods that work well with your body and those that don't. Finding the foods that satisfy your body, soul, and taste buds is part of deepening the connection with yourself. It is part of listening to your inner wisdom. You can do this through the process of the elimination diet. And you can do this through the process of asking questions. Or both.

What can I do to have more energy? Clearer thinking? A strong digestive system? What can I do to heal my health condition? If you listen—really listen—the answers will come to you. This takes getting into a parasympathetic state. A state where your nervous system is not in flight or fight, but rest and digest. The answers will come to you when you are most relaxed. Maybe on a hike, in the shower, as you are going to bed, or breastfeeding your baby.

Sometimes it can be hard to access that all-knowing part of you. Sometimes your body is out of balance and you might be listening only to what your brain is telling you. "Give me a donut!" "Give me a grilled cheese sandwich" "I'm craving pizza!" "I can't go an evening without a drink [of alcohol]!" If you are on the carb/junk food roller coaster then it can be very difficult to access the voices of your body and gut....your innate gut wisdom that tells you what you can do to supercharge your body. This is where detoxes and elimination diets come in. They remove the clutter so you can have a clear signal to your inner wisdom. You'll know when the path is clear when you start craving a plate of sautéed kale, or the thought of a small steak and a large fennel-cabbage salad sounds grounding and energizing, or perhaps when a simple bowl of brown rice, beans, and avocado sounds comforting and nourishing.

This is deep listening. It is a process of nurturing ourselves that is constantly growing and evolving.

Homemade Herbed Sea Salt Recipe (Herbamare)


If you have not already noticed, I absolutely love Herbamare! It is a fantastic replacement for salt or bouillon in savory recipes because it adds flavor without adding as much sodium. By replacing some of the salt with savory herbs and vegetables, you can naturally reduce the sodium while increasing the depth of flavors in your meals. Additionally, the kelp, herbs, and vegetables add important trace minerals, beneficial plant compounds, and pre-biotic fibers that feed the good bacteria in your gut.

Last year I began making my own homemade herbed sea salt recipe to mimic Herbamare. This helps save money and, if you have a garden, helps preserve some of your herb and vegetable harvest! It is so incredibly easy to make once you gather up all of the ingredients. You will just need a food processor or high-powered blender. And, if you don't have all of the ingredients don't worry! This recipe is very forgiving. Experiment with different dried herbs to get the flavor you like best. You can even make a spicy sea salt by including some dried chilies and black pepper!

This homemade herbed sea salt is one of the new recipes I added to the revised edition of my Nourishing Meals book. Use it in soups and stews, on top of scrambled eggs, sprinkled over mashed avocado on toast, use it to make roasted chicken taste amazing, and in any other savory recipe.

Green Smoothie Recipe for Babies and Toddlers



If you have a baby or toddler and are ready to introduce them to the lovely world of green smoothies then keep reading. If you are an adult who's curious about green smoothies or have a child who has never tasted one before, then keep reading. This post is for you too!

By about 8 months of age, most babies are ready for green smoothies. We like to avoid plastic sippy cups and instead use small glass or ceramic cups (I just go to the thrift store for these) for introducing green smoothies and other liquids. This gives babies and toddlers the opportunity to learn how to properly drink from a real cup right from the beginning. And, as an added bonus, they lessen their exposure to very toxic substances found in plastic: BPA and BPS!

Why introduce green smoothies to a baby? This is the perfect time! Children's taste buds develop in the first 3 years of life so it's best to take advantage of this time and offer a wide variety of healthy food choices. This helps to establish a taste bud-brain connection to different flavors and textures! Kale and other dark leafy green vegetables can have a strong flavor but are also a powerhouse of nutrients. The amazing chemicals in kale and other raw cruciferous vegetables assist in detoxification. In fact, sulforophane in these dark leafy greens ramps up phase 2 detoxification in the liver, providing over 72 hours of protection from both environmentally and internally produced toxins. Considering that cancer is the leading cause of death by disease for children in the US today, I think it's very important to make sure that older babies and toddlers are receiving at least one small serving of raw cruciferous vegetables every one to two days. Green smoothies are a perfect way to get them in!

How to Roast Beets ~ The Easy Way!



Roasting beets softens their earthy flavor and brings out a wonderful sweetness. This way of preparing beets is so simple that you'll probably never go back to steaming, pressure cooking, or roasting in foil. All you need is a baking dish with a lid.

What can you do with roasted beets? The sweet-earthy flavor of beets is tempered by pairing them with acidic and pungent foods like orange, lemon, balsamic vinegar, feta cheese, shallots, and red onions. Adding fresh herbs like savory, thyme, and parsley can brighten the flavors even more.

After the beets have cooked and cooled, you can peel off the skins and cut them up for a marinated beet salad (like the Roasted Beet Salad with Orange Vinaigrette on page 230 in my new cookbook). You can also thinly slice them and top with goat cheese, fresh thyme leaves, freshly ground black pepper, and a lemon-olive oil dressing. Puree a whole roasted beet (remove the skins first) with the wet ingredients for a chocolate cake. Have any more ideas for using cooked beets? Please share in the comments section below!

Peach Ginger Mint Green Smoothie



This fresh, summery smoothie will quench your thirst and rejuvenate your cells! My ingredients veer a little from the smoothie ingredients we typically use. This one makes use of all of the produce (except ginger) you can find at your your local Farmer's Market or food co-op right now! Since I have a smoothie recipe for winter, spring, and autumn, I thought a summery green smoothie recipe was in order. You can check out my Super Antioxidant Smoothie which does use summer produce (but it's not green!).

This recipe can be used during the Detox Phase (phase 1) and all phases of our Elimination Diet. Also, since it doesn't have citrus, it is a great first smoothie for older babies! We've been teaching our baby to drink from a cup by giving her little bits of liquid in tiny glasses (bought from Goodwill) since she was 8 months old. We started with water or fresh coconut water and now she can drink a smoothie out of a cup.....no plastic sippy cup needed!

If we give our children the opportunity to learn how to use regular silverware and cups from the beginning, they learn pretty quickly, and all of those baby products you thought you needed become obsolete. Sure, I bought plastic spoons, cups, and bowls with my first baby, even though in the back of my mind it didn't feel quite right. We gave them all away years ago and now that I understand the dangers of using plastic, there is no way I would ever purchase these things again. Babies and toddlers can use small ceramic or glass bowls, wooden bowls, wooden silverware (for young babies), small stainless steel silverware (for older babies), and small glass cups instead of plastic sippy cups.

How to Make Turkey Stock


For many of you Thanksgiving revolved around a turkey, right? You can make good use of the leftover bones and skin and create a nourishing bone broth. Stock made from leftover vegetable scraps and the bones of animals is extremely economical. Think of how much that box of organic chicken broth costs at your local grocery store? And think of the added flavors and strange ingredients in those store-bought stocks. A gigantic pot of homemade stock can be made for less than the cost of one store-bought carton of stock.

Turkey stock is dark and richly flavored. It can be used to make soup (such as wild rice and veggie soup or turkey-noodle soup), turkey tetrazzini, turkey meatballs, in sauces, or simply heated with garlic and herbs to sip on if you have a cold. And it is remarkably easy to make! All you need to do is add veggies, water, and the leftover turkey bones and skin. Then cover and walk away from it. Come back a few hours later and strain into jars. That's it!

Healing Nettle Chicken Stock


Stocks or broths can be used in many different ways, well beyond soups. Homemade stock is far more nutritious than store-bought stock, even the organic brands. For one, commercial stocks, whether chicken or vegetable, use many different "natural" flavorings. What is a natural flavoring anyway? It can be anything, but most often it is a man-made chemical, often containing MSG (free glutamic acid). Did you know that the FDA classifies MSG as "natural" and by using other terms such as "natural flavoring" or "yeast extract," manufacturers can somewhat deceive label-reading consumers into buying their products? The flavoring industry is a billion dollar industry. Most of us won't buy a product that doesn't taste good. Humans have receptors on their tongues for glutamate, the amino acid we recognize as the common "meat" flavor in foods. Using MSG in foods such as chicken stock is a way to cut corners and create a cheap food for a profit. And unfortunately, MSG is a neurotoxic substance causing headaches and in large amounts, possible damage to the brain (in B6 and magnesium deficient people). By making your own stocks using high-quality ingredients, you create so much flavor you would never need to add anything else to them.

Here is an ingredient list for an organic chicken stock made by a well-known company: Organic chicken broth (filtered water, organic chicken), Organic chicken flavor (organic chicken flavor, sea salt), Natural chicken flavor (chicken stock, salt), Sea salt, Organic evaporated cane juice, Organic onion powder, Turmeric, Organic flavor.

Now let's look at the ingredient list for a homemade stock: Organic chicken carcass, onions, garlic, leeks, celery, carrots, parsley, rosemary, thyme, black peppercorns, Herbamare, and fresh nettles.

Cherry Beet Detox Smoothie


What? Beets in a smoothie? I know that may sound interesting, but it is truly delicious as long as you use a smaller sized beet. Too many beets in a smoothie causes it to become inedible, at least for my taste buds. The beautiful purple hue coming from the cherries and beets is very appetizing. At first sip, you'll be hooked. This recipe is perfect to use during the detox phase of The Elimination Diet.

Why is this a detox smoothie?


Pears:
Pears are an excellent source of soluble fibers. These fibers act as a sponge to mop up toxins that are released from the liver via the bile and excreted into the intestinal tract. Once they are mopped up, they can be easily excreted out of the body. If there is no soluble fiber around, some toxins are more likely to be reabsorbed in the intestines and cause more havoc on your body.

Beets:
Beets have unique detoxification support chemicals, call betalains, that help the liver process toxins while keeping antioxidants levels high. These magical compounds are best preserved when beets are raw or cooked lightly. Speaking of antioxidants, beets are a surprisingly good source of the potent carotenoid antioxidants, lutein and zeaxanthin.

Cabbage:
Cabbage has long been known as a fantastic food for the reduction of cancer risk, and for the healing of the intestinal tract. It turns out that there are numerous factors that play into those abilities. These include the beneficial fibers in cabbage, the content of glutamine (an amino acid-like substance used by intestinal cells for healing), and a high content of miraculous compounds called glucosinolates. Glucosinolates are sulfur containing molecules that have glucose attached to them. When you break open the cell walls of cabbage, an enzyme is released called myrosinase that removes the glucose from the sulfur compounds commonly called isothiocyanates. One of these isothiocyanates, sulforaphane, has an amazing capacity to turn on a part of our genes called the Antioxidant Response Element. When it does this, we start producing more antioxidant proteins, and detoxification proteins (enzymes actually) that provide us 72 hours of protection from environmentally and internally produced toxins. Some doctors from John's Hopkins are saying that sulforphane may be one of the best known cancer protective substances on the planet.

Cherries:
Another super star loaded with beneficial detox promoting fibers, cherries have their own stockpile of antioxidant chemicals. The beautiful maroon-colored anthocyanins packed in the skins and flesh of cherries not only quench free radicals, but also have a dampening effect on COX2, a potent pro-inflammatory enzyme. Instead of aspirin, perhaps we should be eating cherries?!

Winter Green Smoothie


This is one of the green smoothies we make in the winter. It is chock full of healing dark leafy greens, cabbage, fruit, and cranberries! Adding the tart green apples and tart cranberries make it palatable without lemon juice.

This smoothie is ideal if you are following The Elimination Diet. I've been enjoying it all day today! I think my toddler boys each drank 2 cups this morning. I couldn't pour it fast enough!

We own and use a Vitamix 5000 series for making our smoothies. If you don't have a high-powered blender then you'll want to make sure your blade is very sharp. You'll also want to half the recipe below.

Soothing Tummy Tea


The holidays are famous for overeating, aren't they? I thought I would share with you a digestion-stimulating herbal tea recipe of ours. It is a unique combination of roots, leaves, and flowers. First you simmer the roots, called a decoction, and then you add the leaves and flowers to steep.

We make a pot of this herbal brew a few times a week. Sometimes we add nettles, sometimes burdock root, but always ginger and licorice.

I am not an herbalist so I can't explain the details of how this tea works on your digestion, just know it works, and it works well.

Briefly, dandelion root stimulates the liver to help digest dietary fats. Ginger decreases inflammation and is soothing to the stomach. Spearmint relieves gas and nausea. Licorice is soothing to the stomach lining, promoting more mucous production which then in turn reduces acid indigestion, ulcers, and an upset tummy. Chamomile contains compounds which relax the smooth muscles in the digestive tract to relieve pain and cramping.

The tea has a delicious blend of sweet and spicy flavors with overtones of mint and chamomile. It is perfect for the holidays or simply sipped while curled up on the couch with your kids and a pile of books on a windy Autumn day.

Super Antioxidant Smoothie


We've been drinking a lot of these yummy, dark purple smoothies lately. Since fresh fruit is in abundance right now, why not?

For those of you on the elimination diet, this drink is great during the two day green smoothie cleanse. Yes, I know, it's not green, but it still works, especially if you are feeling bored with the color green and need a change of pace. It does actually have a little spinach in it so we could technically call it a green smoothie, hey!

The beautiful purple color in this smoothie comes from Anthocyanins (from Greek: (anthos) = flower + (kyanos) = blue). Anthocyanins are plant chemicals that act as powerful antioxidants, in fact, they are over 40 times more potent that vitamins A and C!


Fruits and vegetables are the staff of life. They contain signaling molecules that tell our genes how to operate. So if we are sitting on the couch all day eating potato chips and drinking soda, our genes respond in a way that sets the stage for disease. But if we are drinking purple (or green) smoothies, thinking wonderful thoughts, enjoying life, and eating whole grains, beans, and other amazing whole foods, our genes say hooray, let's be healthy and vibrant!
