Today I am excited to share with you a wonderful cookbook using almond flour. The Gluten-Free Almond Flour Cookbook, by Elana Amsterdam. I have one signed copy to give away, see details below.
Have any of you baked with almond flour before? If not, it is a luscious gluten-free flour made from blanched almonds, also called blanched almond flour. It is a high-protein, low glycemic flour that creates rich, moist, and tender gluten-free baked goods. Blanched almond flour is not the same as Bob's Red Mill almond meal/flour. So be sure not to interchange the two in Elana's recipes.
You can purchase almond flour online at Lucy's Kitchen Shop or Honeyville or Benefit your Life. I feel lucky that Lucy's is right here in Bellingham, Washington! I call and place my order and then go pick it up...no shipping charges!
These scones are out of Elana's cookbook and are entitled, Orange Apricot Scones. I love that they are predominately sweetened with pureed dried apricots and orange juice. I was busy working on my new cookbook when these scones were baking and forgot about them. They were supposed to bake for only 10 to 15 minutes but I baked them for over 30 minutes! Every timing device I have purchased has been dismembered or dunked in the toilet by one of my toddler twin boys so I go by the clock and my sense of smell. This time I was distracted and you'll notice the burned bottoms and golden color of the scones. Totally my fault, not the recipe's.
The Gluten-Free Almond Flour Cookbook is filled with healthy grain-free recipes from cakes and cupcakes to salmon burgers and quiche. The Olive Rosemary Bread and Pancakes are next on my list to make. The photos in the book are so enticing! A good portion of the recipes use eggs but there are also many vegan recipes. If you are egg-sensitive, please still consider this book, you'll find many outstanding, nutritious recipes to choose from.
Elana also has a gluten-free, whole foods blog: www.ElanasPantry.com. You'll find simple, healthy, grain-free recipes there that are all family-friendly.

Oooohhhh...I do LOVE almond flour but have been on the elimination diet and no tree nuts allowed! Looking forward to having them again soon and maybe this new book as well!! Oh how we would live to win this cookbook!!! My two year old son has recently had his allergy testing done and is highly reactive to wheat/gluten and soy!!! I've been gluten free for 2 years now and still haven't had the guts to try gluten free baking. This book looks like it would be a great start, especially because I eat about 3 cups of almonds (almond milk, butter, almonds...any way!) a day!

Ali and Tom, you're cookbook saved me almost a year ago to this day when I found out I was gluten intolerant. I walked out of my Dr. appt, into the store at Bastyr's Clinic and bought your book. I would have been lost without you two. I've tried a few other books since, but I love the education I get along with the recipes that you provide. How exciting! Your blog has inspired me to be gluten free. One of the challenges is how to bake gluten free- I was a baker several years ago and baked treats are a major part of my family's life! This cookbook sounds like it will surely help with our transition.

How Exciting! That cake on the front of the book looks WONDERFUL. My son has been gluten free for a year (he's 2 1/2) and we've barely even scratched the surface of GF possibilities. Mostly we eat homecooked whole and raw foods, and I'm excited for the future to make fancy cakes and things for special occasions. I just recently went GF, since it's become quite clear that my diminishing health is due to gluten. It's not always easy! I'm sure a book like this really helps the transition. Your blog has helped me think outside of the box tremendously! Megan R :)
ReplyDeleteHi, I just made Elana's GF bread 2 days ago! I love her blog. I started baking some GF last fall and just recently (after seeing test results) went GF for good for one of my sons and myself. I checked for cookbook out of the library once and it is a great resource. thanks Kelly Bergner

ReplyDeleteThe scones look great! And the pictures on the cookbook look scrumptious. Last night I made the pumpkin spice bread in your cookbook with brown rice flour and even my husband was amazed at how great it was without wheat flour. I look forward to making more non-gluten recipes.

ReplyDeleteI made your apple crisp recipe tonight and it was very tasty. I have made your Buckwheat Carrot Muffins in the past and they were so great to have as a snack at work. I just make a batch and keep them in the freezer and take them out when I want one.
Last week I made your sandwich bread which was the best gf sandwich bread I would say that is comparable in taste to my old wheat sandwich bread. There is no starchy taste. It was the first time that I had great tasting warm bread out of the oven with butter and molasses. Yummy!
I have a question about freezing the bread. I wrapped it in paper towel and then put it in a plastic bag into the freezer the next day. I took a couple slices out several days later as I am the only one eating the gf bread. I had thawed in the microwave and it seemed once I had the sandwich made and started eating, it crumbled on me but this bread was not dry tasting nor to the touch like many of the others gluten free breads. Is the freezing and then the thawing causing it to break apart? I had a half crumbled sandwich in my plate.
